A tiramisu of 440.58 metersassembled with more than 50,000 ladyfingers and made by more than 100 pastry chefsis the new culinary feat that has managed to conquer a new Guinness record. The recipe, which required more than 3,000 eggsin addition to coffee, mascarpone, sugar and cocoabecame the absolute protagonist of a historic day for international pastries.

The work of Mirko Ricci was officially recognized this Sunday as the sweet of this variety longest in the world. Ricci was the master in charge of coordinating the work of more than a hundred pastry chefs and volunteers in the iconic London neighborhood of Chelsea.

After two days of intense work in the kitchen, preparation and assembly of the iconic italian dessertthe team managed to complete the piece in the Chelsea Metropolis Hallas confirmed by the jury of Guinness World InfoLorenzo Veltri, to the joy of those present.

More than thirty rows: a sweet engineering challenge

The dessert occupied more than thirty rows with a length of 8 meters each, arranged in a curve to form a single continuous piece – similar to the snake in the famous game from the 90s – until reaching the final figure.

This achievement shatters the previous mark of 273.5 metersheld by chef Stefano Callegaro since 2019 in Milan. To beat the record, this huge tiramisu had to meet strict requirements: exceed the 8 centimeters high and the 15cm wideas announced by the second judge of the event, chef Carmelo Carnevale.

The winning recipe and an accurate tribute

This is what the 440.58 meters of tiramisu that just broke the Guinness record in London look like. More than 50,000 cakes and the talent of 100 pastry chefs were needed to surpass the world record.

The traditional recipe used not only stood out for its dimensions, but also for its artisanal quality. The key ingredients were:

  • More than 50,000 ladyfingers.
  • More than 3,000 fresh eggs.
  • Industrial quantities of espresso coffee, mascarpone cheese, sugar and pure cocoa.

As a distinctive detail, the dessert included a personalized thank you to the king Charles III and the queen camilla with the phrase “Thank you your majesty» in gold letters, celebrating the United Kingdom as your home. Although the monarchs could not attend due to their international agenda, they sent a non-public letter to Ricci thanking him for the invitation.

Overcoming challenges in the kitchen

Each of the layers was created in a way artisanalusing pure ingredients and following the italian tradition since the early hours of Saturday. However, the path was not easy.

The team had to adapt to the limitations of a kitchen of just 30 meters, which was not designed for a production of this caliber. In addition, they faced a critical technical setback: the breakage of one of the machines to manufacture the mascarpone creamwhich delayed the feat but did not dampen the team’s spirit.

A solidarity purpose

Beyond recognition, this event has a positive social impact. The proceeds from the sale of this italian delicacy will be destined for the Esharelife Basica British foundation dedicated to supporting the most vulnerable sectors through food banks.
